11 +15 on the rear is nowhere near flush mate - you will be hanging out of the guards like no mans business. 9 +15 on the front is just under flush depending on whether you have a camber kit on.
As for stretch, even a 275 will be stretch like **** on an 11" rim. Do the maths - 11" wide = 275mm bead width. The tyre will look like a trapezium from the rear.
I had a 235 on a 9.5" rim and even that was stretched like hell. FYI most tyre shops here in Australia recommend a 255 on a 9.5" rim, so I would expect them to recommend at least a 300 on an 11" rim.
But hey if you are after the hellaflush look, then you are on the right track (once you put a 15mm spacer on the front)

As I said above 11 +15 will be MEXICAN AS.
9 +35 on the front will be a poor offset, way inside the arches.
9 +15 on the front is perfect flush fitment.
Use this as a guide - 18" 7 spoke 2003 coupe stock wheels are 8" +30, and in my opinion flush at the front you need them 29mm wider, and the rear 40mm wider (if you are lowered and running 4 degrees of camber on the rear, no camber kit on the front).
In my opinion the perfect offset for an 03 coupe is 9.5 +20 front (with 255/40) tyres, 10 +15 rear (with 275/35 tyres).

For the rear 10.5 +30 would need a spacer to be flush - exactly what I said. Using the online calcualtor I linked you to, 10.5 +30 would be 32mm wider than stock, when I told you that you want 40mm wider than stock to sit flush.

Fact is, that the stock wheels on the rear sit some 40mm inside the guard with a lowered car/4 degree camber kit.
So if you buy wheels that sit 40mm wider than stock track (ie. 11 +28 or 10.5 +22 or 10 +15) they will sit flush with the guards.

With a little bit of stretch on your tyres you will not need to roll your guards.
I run 245x40 18" tyres on 9.5" +20 rims on the front with flush fitment with no issues.
I run 275x35 18" tyres on 10" +15 rims on the rear with no problems.
If I hit a bump really hard (like pulling into a raised drivewat at a service station) they will have a tiny rub, but no real issues so far. The stock front guards are actually rolled about 45 degrees already, but the reas are dead flat and would be tyre shredders with too wide tyres/wheels and no rolling.
For the relatively small cost, I would recommend you get your guards rolled anyhow if you want to run even mildly agressive wheels for peace of mind. The cost to have all of your guards rolled should be cheaper than replacing one shredded tyre.
