275 tires on an 11" rim, too stretched?

Function and reliability are first and foremost on my priorities because I don't have time to basically do anything if stuff goes wrong, so I want to keep potential problems to a minimum.

OP, I take it you havent seen these wheels and tires yet? I think I read a post of yours in here saying you were buying an already mounted wheel/tire combo hence the reason you are kind of stuck with this size combo.
as for daily driving or the limited amount you said you will do, the size will be fine. It will be stretched, but the 35 series side wall is a much better option than a 30-series on the same rim. When they run out or you have the loot/time to switch them out go with at least a 285/35 or a 295/30 from most companies will work too.
someone on the first page mentioned they're experience with the Vredestein in this thread as well...i've only heard lots of good things about

They will be similar in height but the 275 will be thinner than the 285. The width of the tire is the problem he is facing, not the height.

I know. I'm saying that a higher sidewall tire with a thinner tire (when stretched) is similar to a lower sidewall tire with a wider tire. The sidewalls are obviously important in determining what your stretch looks like. To give a more obvious example: stretching a 275 tire with a 30 side wall is way different than stretching a 275 tire with 55 side wall (not sure if that even exists).
