And it doesn't "strip" what's already on there off, it's an optically clear layer (unlike wax, which is garbage).

Wax is garbage? The problem with statements like that is they're so black and white, and so dismissive of an entire segment of products it calls into question just about any product recommendation you make. I'm not saying Zaino is bad or that the first part of your post is wrong, but waxes certainly are not garbage. Perhaps you don't like them, millions of people do, and rightfully so.
And for what it's worth, send an e-mail to Sal about layering. As with any sealant or wax after you've achieved full coverage, aside from gloss boosting, additional layers are generally considered a placebo.

I have just started the Zaino process this summer. 2 weeks ago I spent the entire day cleaning/claying/polishing. Since then I have added 3 more coats of Z2, to bring the total to 5. (2 coats z5, 3 of z2) I plan on adding a coat a week for the next little while.
I am no expert but even in the past couple weeks the car has started to look better since the first 3 coats were applied. The shine is deeper(more mirror finish) the color is MUCH sharper and bright, and I have had many friends ask what I did to my car because it looks so good.
In fact I might be getting addicted to polishing.... I will probably keep on appying until I get too lazy...more coats cannot hurt therefore I will keep adding more.

I believe the general consensus is that you can no longer see any perceptual improvement after layer 15 of zaino. All the layers added after that just improve protection/durability of zaino.
Two years ago I hit about 23 layers of zaino when I had a garage.
Now, I'll be lucky if my car gets a monthly wash.
