Lately when I've floored my G, the Slip light comes on for a bit. Anyone experience this? Got an auto. Any concern? What does that mean anyways?

Yup. It's the traction control engaging and slowing you down to stop the wheels from spinning. If the ground is dry and you're trying to play, turn off VDC, and you should be able to feel the difference when you floor it.

What happens if the ground is wet and you turn off VDC when you are doing full throttle on a straight?

The slip light would still come up w/ VDC off... Happened to me before...weird...

It's called "Traction Control", separate from the "Vehicle Dynamic Control". You can turn the VDC off, but can't turn off the TC.

Traction control and Stability control are both parts of VDC (Vehicle Dynamic Control) -- and they both get turned off. All that's left on is the "Brake LSD" subsystem that brakes one rear wheel if it's spinning faster than the other rear wheel.
If you're already moving fast on the wet ground when you turn off the system, not much would happen. If you floor it from a start or low speed, you'll spin the tires.. and possible make the back end swing around if you don't know how to steer in that situation.

under EXTREME circumstances even with the VDC off, the TC will still activate as it is never completely off unless you pull the stop lamp fuse inthe fuse box.
In my 6 mt when I was learning how to launch I played around with 5k drops a couple times and had VDC off, TC still worked, light still came on and my tires only spun for about 5 seconds. With the stop lamp fuse pulled you can spin for as long as you want.
