I traded in my 06 G35 6 speed manual at 171796 miles. And yes it frequently burned 1 quart of oil per 1000 miles and I did 53 oil changes changing oil every 3500 to 4k miles.
It was a very reliable vehicle for anyone that checks their oil once a week.
I also previously owned a 1974 RX 4 Mazda with a rotary engine that also used oil to lubricate the engine seals . Many engines were destroyed by many who never checked their oil and essentially killed the rotary engine in the United States which was very light and powerful.

Whatever used vehicle you decide to purchase spend the $150 or so to have the vehicle thoroughly checked out by an Infiniti dealer to run the VIN number and give you a vehicle service history. There are many previous owners that leased and failed to do timely oil changes. Any engine with evidence of sludge is not going to give you a reliable experience.

Huh? Seriously? Even with only 5k-7k miles a year I would change the oil every 6 months. But that is just me.

Yearly is fine, oil has a shelf life of between 5-10 years depending on a great many variables. The biggest reason for recommending yearly changes as opposed to more than 1year is mostly so people don't forget about it.

I don't trust that for a minute.

It probably has a "sealed" shelf life, but like milk, once it's opened it's susceptible to oxidation and any expiration date goes out the window. And yes, there are many variables, but heat is the biggest (especially when subject to an immediate cooling cycle - that's why short trips are hell on your car and you can't trust low milage).

Oil doesn't actually break down (which is why it's infinitely recyclable), but it's the detergents that degrade, oxidize and evaporate. Those things are not controllable; it's the engines that have gotten better; oil has too but not at the same rate. It's like the vegetables are the same, but we've got better Tupperware. But still, I'm not going over 5000 miles or 6 months.

Discussions (or debates) about oil change intervals and so on are a waste of people's times and efforts. No matter what one's opinion is, some will argue it's wrong. No matter what oil brand, viscosity, synthetic vs blend vs conventional, you'll get arguments about why it's wrong. I've found that it's best to keep your brand, interval, and so on to yourself....

'08 G35s with 6MT, at 79k miles, doesn't burn oil, conventional oil change every 4500 miles.

My wife drives a 2003 Sedan. I drive a 2008 sedan. Never add a drop between 4K oil changes on either.

You know that some cars do 10k oil changes right?

So if you drive 5-7k per yr, you should be fine; that's actually not much. That's about how much I drive my G (~7k/year). I could probably do one oil change per year and just add a quart or 2, but since the car is older and burns oil I tend to follow the routine intervals at 3500.

Now if your car sits for 3-6months out of the year, then yes change it more frequently. But for vehicles that are driven routinely and maintained, it shouldn't be an issue.

Newer cars than 07-08 Infiniti cars do but even Infiniti indicates either 3750 or 7500 (Schedule 1 and Schedule 2). They also base this on conventional oils. Can you run longer intervals with confidence ? Sure. Use synthetic oils ? Sure. If you combine highway miles with synthetic oils, you can probably go 10k miles in an 07 or 08 G 35 too. I wouldn't personally.... 7500 would be the most I'd go.

I've seen multiple oil analysis in the 10k range that show ZERO issues. One went 12k and the analysis company said try 14k. The owner describes their driving as 70% city driving too. This thread (report doesn't show up) is for 10k miles on the previous generation DE engine. Good for them !
