Losing Power after 3000 RPMs

I recently attempted to perform all the maintenance on my 2006 G35 coupe. I replaced the valve cover gaskets, all spark plugs, all coils, camshaft censor, and a new MAF sensor. I go to start the car, and in idle it is sounding rough; not how it usually would sound. When the car is driving full throttle, acceleration does not work, although it does accelerate very slowly. After around 3000-4000 RPMs, it tends to max out on the amount of power I'm receiving. When I checked the valve cover, the seals for the cylinder were all cracked and worn down. I bought my spark plugs and coils from A-premium part; the Iridium Spark Plugs came preset with a 0.039-0.043 inches gap. It does tend to smell like burnt oil at times. My coil pack wiring is correct. Could anyone by any chance possibly give me a direction to go in, in the attempt to fix my car?

Have you tried the Throttle Body Relearn process?
Here is a thread about it: Throttle body reset
Also, why did you replace ALL ignition coils, did you have any check engine codes for misfires?
I run these ignition coils:
Hitachi IGC0007 Hitachi IGC0007
in my 07 VQ35HR.
