Reading the Transmission Temperature

Correct, there isn't a good way to read tranny temp, you will either need to cut in an aftermarket sending unit to the cooler feed line or temporarily put a sensor down the fill tube.
Checking oil level is easy, drive around for 15 minutes, put the car in park, leave the engine running, remove the fill tube cap (10mm bolt) and check the dipstick (wipe it clean 6-10 times before trying to get a reading, there will be a lot of fluid up in the well tube that needs to be wiped off).
EDIT: Make sure you're on a level surface when checking fluid level or it can appear to be WAY off.
