Yea hard to say, definitely the front looks to be a lower offset. But your rear seems to be about right. I wouldn't say it's any less than +20
My suggestion.... save up for wheels. You're trying to hard to get wheels and make it "work" when it's really not the way to go about doing it.
Your tires are made for 8" wide wheels. I wouldn't recommend putting them on anything wider than 8.5"
Offset has nothing to do with brake clearance, so that's up to the guys that sell you the wheels.
Offset, 8.5 +10 will fit all around without fender work.
BTW, don't sell your stock wheels. It'll come back to bite you.

2. What offsets will fit on he coupe with brembo without having to roll fenders and get camber kits?
So basically what im sayin is, i am looking at aftermarket 18. id like to use my stock tires as they are almost new, but im not sure what size 18's will fit my tires,and fit the coupe over the brembos.
I will be selling my stock 18's

First things first, buy coilovers. You can not pull off this look with a spring drop.
Once you're dropped, I'd go 15mm out back and 10mm in the front. The black coupe you posted is kind of uneven. The front is much less aggressive than the rear.
Also, lose the tires. Throw the fronts on the rear and buy 225/35 for the front wheels.

You can pull them off, you'll likely need to pull the fender liner hardware out of the front, but wait and see you might be ok without going too low.
The rears you should be fine, you may need a very minor pull to help the 285 clear but it's nothing crazy. At worst, you don't want to pull the fenders then you can add a little bit of camber to get them to tuck.
However, keep in mind, these tire sizes are uneven sizes. You will have a slightly stretched tire in the front unless you go to a 265/35. You can run the 255, but it's bulkiness will not be the exact same as the rear 285 on 11"

Body work and all that aside, what would be the right tire spec? Thinking probably a 30 or 35 aspect ratio (or 30 rear, 35 front).

Just make sure you can get em in the fenders. With the right offsets you're fine.
No, that will only push the wheels out, lowering the offsets.
